Garlic Shrimp Pizza

In my book, garlic-shrimp anything is amazing, and this flavorful garlic shrimp pizza is no exception. Garlicky shrimp tossed with bright red onion, olive oil and a little salt and pepper, it is simplicity at its best. If you make the pizza dough a day ahead of time, it can be a surprisingly easy weeknight meal. Turn on the oven, chop up the ingredients, spread across the pizza dough and bake. I’d serve it with a simple green salad tossed in a light, citrusy dressing and enjoy it all with a margarita…or a glass of light-bodied red wine like Pinot Noir or Grenache.

I make this with my Homemade Pizza Dough. It makes enough dough for 2 pizzas, so make one Garlic Shrimp Pizza and one Goat Cheese and Caramelized Shallot Pizza. Bake one right after the other.

Garlic Shrimp Pizza Recipe:

One, 12-inch pizza.

Ingredients:

Crust:

  • 1 ball of Pizza Dough (The pizza dough recipe makes 2 balls)

  • More olive oil to brush the dough

Garlic Shrimp Topping:

  • 12 - 16 large shrimp, peeled, deveined, cut into ¾ inch pieces

  • ½ cup red onion, thinly sliced, then cut slices in half

  • 2 large garlic cloves, minced

  • ¼ tsp fine salt

  • ¼ tsp black pepper

  • 2 TBSP olive oil

  • 6 ounces shredded mozzarella cheese 

  • 1 TBSP grated fresh parmesan

  • 1 scallion, green parts, finely chopped

Instructions:

One hour before baking, place a pizza stone in the middle-bottom position of the oven, and turn on the oven to 500° F. (Most home ovens take a long time to fully preheat to 500°.) If your dough is in the refrigerator, remove it and let it come to room temperature on the counter.

Pat shrimp dry and toss with red onion, garlic, salt, pepper, and olive oil in a medium size bowl. 

Roll or stretch the pizza dough into a 12-inch circle on a pizza pan or floured countertop, and brush the edges with olive oil. Spread the mozzarella evenly across the dough then the shrimp mixture evenly on top of that. Sprinkle with grated parmesan.

Bake for 12-14 minutes until the shrimp are cooked through and the crust is golden brown and crisp. Remove from oven and transfer to a cutting board. Sprinkle with chopped scallion and slice with a pizza cutter to serve.
